Duck in White Wine with Vegetables and Herbs

| Ingredients: |

1 duck, about 4 lb. |
|
1/4 cup butter |
| |
3 oz pancetta, diced |
|
1/2 bottle dry white wine |
| |
1/2 cup parsley
|
|
1 fresh rosemary sprig
|
| |
1/2 cup fresh sage |
|
2 bay leaves |
| |
Salt and freshly ground pepper |
|
1 lb onions |
| |
2 carrots, scraped and sliced |
|
|
|

| Preparation: |
|
Prepare and clean the duck. Cut it into medium-sized serving pieces. In a large skillet or casserole, combine the butter with the pancetta over moderate heat. Add the duck pieces and brown for about 20 minutes. Pour in the wine, add the herbs and salt and pepper. Cover the pan and cook on low heat for about 1 hour.

In another pan, gently fry the onions with the remaining butter. Add the carrots and season with salt and pepper. Cover and cook gently for about 40 minutes over low heat.

When ready to serve, remove and discard the herbs. Stir the vegetables in with the duck and cook together for 5 minutes. Transfer to a serving platter and serve

NOTE: Pancetta is an Italian bacon that is cured with salt and spices but not smoked. Substitute bacon or Canadian bacon if pancetta is not available in your local stores.
