Chocolate Walnut Refrigerator Cookies

| Ingredients: |

1 1/2 c. confectioner's sugar |
|
1 1/4 c. margarine, softened |
| |
1 egg |
|
3 c. all purpose flour |
| |
1/2 c. cocoa
|
|
1/4 tsp. salt
|
| |
1 1/2 c. walnuts, finely chopped |
|

| Preparation: |
|
Beat confectioner's sugar, margarine and egg until creamy.
|
Combine flour, cocoa and salt. Add flour mixture to margarine mixture. Mix well.
|
Divide dough into two equal parts. Shape each half into a log roll, about 1 1/2 inches in diameter. Roll logs in chopped walnuts. Wrap logs with plastic wrap; refrigerate at least 4 hours to chill.

Heat oven to 325 degrees. Slice cookies about 1/4 inch thick. (If dough crumbles while slicing, allow to warm slightly.) Place about 1 inch apart on ungreased cookie sheet. Bake about 8 minutes or until set. Do not brown cookies. Immediately remove to wire rack to cool.

Makes about 6 dozen cookies.

Variation: Frost cookies with chocolate icing.
|
Make Ahead Options: Dough can be stored in refrigerator for up to two weeks. Or, dough can be frozen up to six weeks and thawed before slicing.
